Dill 

A fragrant and versatile herb, Dill is loved for its delicate, feathery leaves with a subtle aniseed flavour. This striking plant can reach up to 90cm tall, with slender stems topped by clusters of bright yellow flowers. Perfect for flavouring fish, eggs, salads, soups, dips, and potatoes, its seeds are equally valuable for pickling, vinegars, and adding a nutty note to breads.


Planting
Where: Well-drained soil or compost in beds or containers, in full sun.


Care
Watering: Keep well watered until established and during dry spells.
Protection: Guard against frost, slugs, and snails.
Self-Seeding: Will naturally self-seed in hot weather for a continual crop.

Size: 60 – 90cm × 30 – 40cm.


Harvesting
Leaves & Flowers: Snip as needed, ideally in the morning when flavour is strongest. Avoid taking more than one-third of the plant at a time.
Seeds: Harvest in late summer when they turn brown.
